    This holding and proofing cabinet offers versatility, durability, and performance! Since it comes with a control module that allows you to switch between holding and proofing modes, you can use this cabinet for more than one activity. If you run a small business and need one unit to proof your homemade breads and rolls during the day but function as a holding cabinet for hot foods during the dinner rush, this cabinet is the perfect choice.
    Thanks to its removable combination heating / proofing module, this cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch! A powerful, thermostatically controlled forced air heating system provides fast heat-up and exceptional recovery times. Also, moisture controls allow you to adjust humidity levels, to create the perfect environment for any type of food.
    This full-size holding and proofing cabinet features lip load tray slides set on 1 1/2" increments. It can accommodate up to 35 full size sheet pans as a result, offering a large capacity for your baked goods or other dishes.
